Peanut Butter and Jelly Muffins
Peanut Butter and Jelly Muffins
2 cups flour
1/2 cup sugar
1 tbsp. baking powder
1/4 tsp. salt
1 cup milk
1/2 cup peanut butter
1 egg
2 tbsp. butter melted
1/3 cup jam (any kind)

Prep: 10 minutes Cook: 20 minutes Makes: 24 miniature muffins

1. Preheat oven to 350°F and spray 2 mini-muffin tins with nonstick cooking spray. Stir together the flour, sugar, baking powder and salt in a small bowl.
2. In another bowl, whisk together the milk, peanut butter, egg and melted butter. Add the dry ingredients and stir until the flour disappears. Be sure not to stir too much!
3. Fill the muffin tins half full with batter. Top each with 1/2 teaspoon jam, then spoon the rest of the batter over the top. Bake for 20 minutes or until lightly browned.
