Island Ice Cream
Island Ice Cream
1/3 cup dried pineapple finely chopped
1/3 cup dried mango finely chopped
1/4 cup rum
1/4 cup Rose's Sweetened Lime Juice*
1 pint good quality vanilla ice cream
3 tbsp. coconut toasted
Prep time: 15 minutes, Cook time: 10 minutes
Chill time: Several hours or overnight

Place dried fruit, rum and lime juice in a small
saucepan. Cook over low heat for 10 minutes or until
liquid is absorbed. Remove from heat and place in the
refrigerator to cool. Transfer ice cream to a
microwaveable glass bowl and microwave for 15 to 30
seconds on the defrost setting to soften slightly. Stir in
fruit and coconut. Cover and return to the freezer until
