Turkey and Spinach Meatloaf
1 (20- oz.) package lean ground turkey
1/2 of a 10- oz. box frozen chopped spinach thawed and squeezed dry
2/3 cup instant potato flakes
1/2 cup carrots shredded
1/2 cup onion chopped
1/4 cup marinara sauce
1 tsp. garlic salt
1 tsp. McCormick Collection Italian Seasoning
1/4 tsp. pepper
1 egg
Prep time: 20 minutes, Cook time: 50 to 60 minutes

Preheat oven to 350°F and spray a shallow baking
pan with nonstick cooking spray. In a medium bowl,
mix together all ingredients until well blended.
Shape mixture into a loaf and place on prepared
pan. Bake for 50 to 60 minutes or until internal
temperature reaches 165°F.

Tip! Spread with an additional 1/4 cup marinara
sauce during the last 5 minutes of cooking, if

Makes 4 servings.

For a delicious low-carb meal, add a side of Faux
Tatoes (see separate recipe) and fresh steamed

This is a delicious meatloaf. I've fixed it several times for my family. When I didn't have an oven, I used my slow cooker. Put about a cup of water in the bottom, and set it for four hours. Check it, and add water, if needed, from time to time, until it is done. There are never any leftovers!
