Trout with Marinated Tomatoes and Olives
Ingredients
1/2 cup Mezzetta Pitted Bistro Blend Olives
1/2 cup tomato (preferably heirloom) diced
1 tbsp. each: extra virgin olive oil and lemon juice
lemon juice
1 clove garlic minced
1½ lbs. Sierra Red Bow Red Trout fillets
Sea salt and pepper to taste freshly ground
2 tbsp. fresh basil snipped
Cooked orzo pasta (optional
Directions

Prep: 15 minutes Cook: 6 to 10 minutes Serves: 4

1. Cut olives into wedges and place in a medium bowl with tomatoes, olive oil, lemon juice and garlic; set aside.
2. Season trout with salt and pepper to taste; cook on a well-oiled grill for 3 to 5 minutes on each side or until trout flakes easily with a fork. Remove from grill and place on a serving platter.
3. Top with olive mixture and basil. Serve over hot cooked orzo, if you like.
