Grilled Zucchini and Polenta
Grilled Zucchini and Polenta
Ingredients
4 zucchini
1 (1½- lb.) tube of San Gennaro Polenta
1 red bell pepper seeded
2 tbsp. each: extra virgin olive oil, lemon juice and Christopher Ranch Pesto
Season to taste with salt and pepper
2 tbsp. Parmesan cheese shredded
Directions

Prep: 10 minutes Cook: about 5 minutes Serves: 6

Trim ends from 4 zucchini and cut in half lengthwise. Cut 1 (1½-lb.) tube of San Gennaro Polenta into 12 slices. Cut 1 seeded red bell pepper into 4 pieces. Cook all on a well-oiled grill over high heat for about 2 to 3 minutes on each side to lightly char. Cut zucchini and bell pepper pieces in half. Stir together 2 tbsp. each: extra virgin olive oil, lemon juice and Christopher Ranch Pesto; drizzle over polenta and vegetables. Season to taste with salt and pepper and sprinkle with 2 tbsp. shredded Parmesan cheese.
