Barbecued Tri Tip Potato Stuffers

Barbecued Tri Tip Potato Stuffers
1 (12- oz.) russet potato
1/4 cup light sour cream
1/3 cup barbecue sauce divided
1/3 cup rotisserie tri-tip (in our (in our Deli) diced cooked
1/4 cup shredded Cheddar or smoked Cheddar cheese
2 tbsp. green onions sliced

Prep: 10 minutes Cook: about 20 minutes total Serves: 2

1. Scrub potato and pierce with a fork. Place on a microwave-safe plate and microwave on HIGH for 7 minutes or until soft when gently squeezed. Let cool slightly, then cut in half.
2. Scoop out potatoes, leaving a 1/4-inch rim of potato inside the skin. Mash potatoes with sour cream and half the barbecue sauce. Spoon back into potato skins and place on a piece of heavy-duty foil.
3. Stir together remaining barbecue sauce and tri tip in a small bowl and spoon over potato halves. Top with cheese and green onions and grill over medium heat for 10 minutes or until cheese is melted and filling is hot. Recipe may be doubled, adding a few extra minutes to the microwave cook time.
