Chicken and Black Bean Nachos
Chicken and Black Bean Nachos
Ingredients
1 (6- oz.) bag Beanitos Black Bean Chips
1 (8- oz.) bag shredded Mexican blend cheese (try Daiya Shredded Cheese for a dairy free option)
2 cups diced rotisserie chicken
1/2 cup black beans, rinsed and drained
1 (7- oz.) container Raley's Pico de Gallo
sour cream (try Follow Your Heart Vegan Sour Cream for a dairy free option)
sliced green onions
guacamole
Directions

This makes a great gluten free meal. If you are going dairy free too, you can substitute Daiya Shredded Cheese (melts just like dairy cheese) and use Follow Your Heart Vegan Sour Cream instead.

Prep: 10 minutes, Cook: about 10 minutes, Serves: 6

1. Place chips on a foil baking sheet or shallow foil baking dish, overlapping slightly. Top with remaining ingredients except sour cream, green onions and guacamole.

2. Bake at 425°F for 10 minutes or until cheese is melted and ingredients are hot. Top with sour cream, green onions and guacamole.
