Southwestern  Black Bean Burgers

Southwestern Black Bean Burgers
Ingredients
2 (15- oz.) can Eden Organic Black Beans rinsed and drained
3/4 cup Corazonas Hint of Lime Tortilla Chips crushed
1/2 cup each: sliced green onion and chopped red bell pepper
1 (1.13- oz.) packet Simply Organic
Southwest Taco Seasoning Mix
2 eggs
2 tbsp. organic olive oil divided
Alvarado St. Sprouted Burger Buns
Lettuce, onions, salsa and guacamole (optional toppers)
Directions

Prep: 15 minutes Chill: 30 minutes
Cook: 10 minutes Serves: 6

1. Press beans between several layers of paper towels to remove any excess moisture. Place in a food processor with chips, green onion, bell pepper, seasoning mix and eggs. Pulse on and off until all ingredients are very finely chopped. Cover and refrigerate for 30 minutes for easier handling.
2. Brush a sheet of heavy-duty foil with half the oil. Using wet hands, shape mixture into 6 flat patties with wet hands and place on foil. Place foil on grill over medium-high heat and cook for 5 minutes. Brush patties with remaining oil; turn and cook for 5 minutes more.
3. Serve on toasted buns with any desired toppers.
