Falafel Burgers

Falafel Burgers
2 garbanzo beans, rinsed and drained
1/2 cup fresh parsley leaves
1/2 cup chopped red onion
2 tbsp. lemon juice
1½ tsp. ground cumin
1½ tsp. chili powder
1½ tsp. garlic salt
1½ tsp. ground coriander
1/2 cup Casbah Falafel Mix (from a 10- oz. box)
2 eggs
2 tbsp. organic olive oil, divided
6 wheat pita bread circles or burger buns
Lettuce, tomato slices, cucumber slices (optional toppers) hummus and tahini sauce

Prep: 15 minutes, Chill: 30 minutes, Cook: 8 minutes, Serves: 6

1. Press beans between several layers of paper towels to remove any excess moisture. Place in a food processor with parsley, onion, lemon juice, seasonings, falafel mix and eggs. Pulse on and off until all ingredients are finely chopped. Cover and refrigerate for 30 minutes for easier handling.

2. Brush a sheet of heavy-duty foil with half the oil. Using wet hands, shape mixture into 6 flat patties and place on foil. Place foil on grill over medium-high heat and cook for 4 minutes. Brush patties with remaining oil; turn and cook for 4 minutes more.

3. Cut 1-inch off the top of each pita circle. Open carefully and place a burger in each. Add any desired toppers.
