3 large ripe mangoes
1 (8- oz.) ball fresh mozzarella
3 tbsp. extra virgin olive oil
3 tbsp. lemon juice

Serves: 8

Peel and pit 3 large ripe mangoes and cut into 1/4-inch thick slices. Thinly slice 1 (8-oz.) ball fresh mozzarella and layer alternately with mangoes on a platter. Stir together 3 tbsp. each: extra virgin olive oil and lemon juice; stir in sea salt and pepper to taste. Drizzle over salad and top with snipped fresh basil.
