Julienne Vegetable Sauté
Ingredients
2 medium carrots peeled
1 medium zucchini ends trimmed
1/2 small red bell pepper
1/3 cup small red onion wedges
1 tbsp. butter
1/4 cup white wine
1 tsp. lemon juice
1/4 tsp. salt
pepper to taste freshly ground
Directions
Prep time: 10 minutes, Cook time: 12 minutes

Cut carrots, zucchini and bell pepper into thin julienne strips. Melt butter in a medium skillet. Add carrots; stir-fry over medium heat for 5 minutes. Add remaining vegetables and cook for 5 minutes more. Stir in wine, lemon juice, salt and pepper; cook over high heat for about 2 minutes or until liquid has cooked off.

Makes 4 servings.
