Game Hens with Cherry Stuffing
Game Hens with Cherry Stuffing
2 tbsp. butter
2/3 cup leek (white and pale green part only) sliced
2/3 cup celery chopped
4 cups Old World Style Rustic French Bread cubed
3/4 cup Knorr Chicken Broth
1/4 cup dried cherries
1-1/2 tbsp. fresh herbs (equal parts rosemary, sage and thyme), chopped, divided

1 Cornish game hen halved
Salt and pepper to taste
Prep time: 25 minutes, Cook time: 40 to 45 minutes

Preheat oven to 350°F and lightly butter a 7-by-11-inch casserole dish. Melt 2 tbsp. butter in a small skillet. Sauté leeks and celery for 5 to 7 minutes or until softened. Place leeks, celery, bread, broth, cherries and 1 tbsp. herbs in a medium bowl; toss well until broth is absorbed. Turn into prepared dish. Rinse game hen and sprinkle with salt, pepper and remaining herbs and place on top of stuffing. Bake for 35 to 40 minutes or until internal temperature of hen reaches 165°F. Serve with Bordeaux Cherry Sauce (recipe also online).
