Janice's Good Gumbo

Janice's Good Gumbo
1/4 lb. turkey ham cubed
1 lb. raw shrimp peeled and deveined
1 lb. fresh or frozen okra, cut into cut into 1/4-inch rounds
1 medium onion peeled and diced
1 green bell pepper seeded and diced
2 cloves garlic minced
1 tsp. pepper or to taste
5 cups water
1 lb. pre-cooked Butterball Smoked Turkey Sausage or Silva Chicken Italian Sausage
Sausage or Silva Chicken Italian Sausage, cut in to rounds
2 cooked crabs meat removed from shells, or
4 oz. fresh or frozen crabmeat
1 tbsp. gumbo filé*
Seasoned salt to taste
Prep time: 20 minutes, Cook time: 1-1/4 hours

In a large nonstick pot, sauté ham until browned; remove and set aside. In the same pot, cook shrimp until it turns pink; remove and set aside. Combine okra, onion, bell pepper, garlic and pepper in the same pot. Add water and bring to a boil; reduce heat and simmer, uncovered, for 1 hour. Add ham, shrimp, sausage and crabmeat. Continue cooking for another 10 minutes. Add filé and salt; cook for an additional 5 minutes. Serve over hot Mahatma Extra Long Grain Rice, if desired.

Makes 6 to 8 servings.
