Sicilian Eggplant Pizza

Sicilian Eggplant Pizza
2 tbsp. extra virgin olive oil divided
3/4 cup chopped onion
3 cups eggplant peeled, chopped
1-1/2 cups tomato seeded, chopped
3 cloves garlic minced
1/2 tsp. salt
pepper to taste Freshly ground
1 (12- oz.) package 7 -inch Mama Mary’s Pizza Crusts
6 oz. fresh mozzarella cheese or Precious Mozzarella Cheese thinly sliced
3 tbsp. fresh Parmesan cheese shredded
Snipped fresh basil
Prep time: 15 minutes, Cook time: 35 minutes

Heat 1 tbsp. olive oil in a medium nonstick skillet. Add onion; sauté over medium heat for 5 minutes. Add remaining oil to the skillet, then add eggplant, tomato, garlic, salt and pepper. Cook over medium-low heat for 15 minutes or until eggplant is very soft, stirring frequently. Preheat oven to 425°F. Top pizza crusts evenly with mozzarella, eggplant mixture and Parmesan. Bake for 15 minutes or until crust is lightly browned and cheese is melted. Sprinkle with basil and cut into small wedges. Serve warm.

Makes 10 to 12 appetizer servings.
