Chipotle Pork Stew

Chipotle Pork Stew
1 tbsp. Mazola Vegetable Oil
1-1/2 lb. boneless country style pork strips cubed
1 small onion peeled and chopped
2 cloves garlic minced
1 (7- oz.) can tomatillos drained and roughly chopped
1 (4- oz.) can Ortega Diced Green Chiles
1 tbsp. minced chipotle peppers in adobo sauce
1/2 tbsp. chili powder
1 tsp. ground cumin
1 tsp. oregano leaves
1/2 tsp. salt
Sour cream
Mahatma Spanish Rice
Prep time: 15 minutes, Cook time: 1-3/4 to 2 hours

Heat oil in a large pot. Add pork and brown
well on all sides. Add onion and garlic and cook for 5 minutes to lightly brown. Stir in tomatillos, chiles, chipotle peppers and seasonings; bring to a boil. Reduce heat and simmer, covered, for 1-1/2 to 2 hours or until tender. Serve over cooked rice with guacamole and sour cream.

Makes 4 to 6 servings.

*For less fat, substitute pork loin chops.
