Hearty Split Pea Vegetable Soup

Hearty Split Pea Vegetable Soup
1 lb. ham hock
4 cups Chicken Broth
2 cups water
1-1/2 cups green split peas
3 carrots peeled and chopped
3 ribs celery chopped
1 large onion peeled and chopped
2 bay leaves
1-1/2 tsp. thyme leaves
Seasoned salt and pepper to taste freshly ground
Prep time: 15 minutes
Cook time: 1 hour, 45 minutes

Combine all ingredients except thyme, salt and pepper in
a large stockpot and bring to
a boil. Reduce heat and simmer, covered, for 1-1/2 hours
or until split peas are very tender. Remove ham hock and
bay leaf. Using a blender or stick blender, blend soup
until somewhat puréed, with some vegetable chunks
remaining. Return to pot and add seasonings; simmer for
10 minutes more.

Makes 4 to 6 servings.

To lower the salt content, I would use a low sodium chicken broth, and not add any. Leaving out the ham would do that also.
