Hot Corned Beef Sandwiches with Apple Slaw
Hot Corned Beef Sandwiches with Apple Slaw
2 tbsp. Kerrygold Pure Irish Butter
8 (1/2 -inch thick) slices French bread
1/2 cup shredded Irish Swiss Cheese
1/2 lb. cooked corned beef, sliced
2 tbsp. light mayonnaise
1/2 tbsp. honey
1/2 tbsp. vinegar
1 medium green apple, cored and coarsely shredded

Prep: 15 minutes, Cook: 10 minutes, Serves: 4

Spread equal amounts of butter on one side of each bread slice. Place bread, buttered side down, in a large skillet. Top half of the bread slices with cheese and the other half with meat. Cook over medium heat for 5 to 10 minutes or until bread is golden brown, cheese is melted and meat is warmed. Close sandwiches. Meanwhile, whisk together mayonnaise, honey and vinegar in a medium bowl. Add shredded apple and stir well. Serve apple slaw on the side of each sandwich.
