Mexican Style Beef and Potatoes
Mexican Style Beef and Potatoes
1 (24- oz.) package pot roast precooked, diced
2 cups prepared thick salsa
1 cup onion chopped
1 (4- oz.) can green chiles diced
1 tbsp. Morton & Bassett Mexican Blend Seasoning
1 lb. small red potatoes cubed
1 cup chayote squash peeled, diced
Tia Rosa Tortillas, avocado, cilantro, sliced green onions (optional)
Prep time: 20 minutes, Cook time: 45 minutes

Combine all ingredients except squash and
accompaniments in a large saucepan. Bring to a
boil; reduce heat and simmer, covered, for 40
minutes. Add squash and simmer for 5 minutes
more. Spoon into tortillas, if desired, and top with
avocado, cilantro and green onions.

Makes 6 servings.
