Aïoli is a simple French sauce based on olive oil and a hint — or more than a hint! of fresh garlic. A big dollop is traditional with boiled fish, seafood soups, hard-cooked eggs and fresh asparagus. Spread it on baguettes or as a dip with veggies.
Prep time: 10 minutes

1. Place garlic and egg yolk in a mixing bowl.

2. Stir in lemon juice.

3. Add oil in a slow, steady stream, whisking constantly, until mixture becomes thick and creamy. Season to taste with salt and pepper.

Tip! Stir chopped fresh herbs or grated lemon zest into prepared aïoli.

Makes 1/2 cup.
