Taqueria Soft Tacos
1/2 lb. boneless, skinless chicken breasts
1 tbsp. fresh lime juice
1 to 2 tsp. chipotle chile powder
1 tsp. garlic salt
1/2 tsp. oregano
1 tbsp. extra light olive oil
1 cup very small onion wedges
8 corn tortillas
1 cup Mexican blend shredded cheese
salsa, if desired
sour cream, if desired
guacamole, if desired
Prep time: 15 minutes, Cook time: 10 minutes

Cut chicken into 1/2-inch pieces. Place in a medium bowl and toss with lime juice, chile powder, garlic salt and oregano. Heat oil in a medium skillet over medium-high heat. Add chicken and onions; cook for 10 minutes, stirring frequently, until chicken is browned and cooked through to an internal temperature of 165°F. While chicken is cooking, heat tortillas in a hot skillet until soft. Place equal amounts of chicken and onions in each tortilla and top with cheese. Top as desired with salsa, sour cream and guacamole. Serve with black beans and Spanish rice.

Makes 4 servings.
