Taqueria Soft Tacos
1/2 lb. Raley's boneless, skinless chicken breasts
1 tbsp. fresh lime juice
1 to 2 tsp. chipotle chile powder
1 tsp. garlic salt
1/2 tsp. oregano
1 tbsp. extra light olive oil
1 cup very small onion wedges
8 corn tortillas
1 cup Mexican blend shredded cheese
Salsa (optional topping)
Sour cream
Guacamole (optional topping)

Prep: 15 minutes, Cook: 10 minutes, Serves: 4

1. Cut chicken into 1/2-inch pieces. Place in a medium bowl and toss with lime juice, chile powder, garlic salt and oregano.

2. Heat oil in a medium skillet over medium-high heat. Add chicken and onions; cook for 10 minutes, stirring frequently, until chicken is browned and cooked through.

3. While chicken is cooking, heat tortillas in a hot skillet until soft. Place equal amounts of chicken and onions in each tortilla and top with cheese. Top as desired with salsa, sour cream and guacamole.
