Ham with Ginger Apricot Sauce
Ham with Ginger Apricot Sauce
1/4 cup Minute Maid Premium Orange Juice
3 tbsp. cherries dried
1-1/2 tbsp. crystallized ginger* minced
1 (15.25- oz.) can apricot halves drained and coarsely chopped
1/8 tsp. ground allspice
1-1/2 lb. ham thick-cut
*In the Asian foods section or the spice aisle
Prep time: 15 minutes, Cook time: 10 minutes

Combine orange juice, dried cherries and ginger in
a small
saucepan. Bring to a boil, then reduce heat slightly.
for 5 minutes or until cherries are plump and have
most of the juice. Stir in apricots and allspice; cook
for a
few minutes more to heat through. Meanwhile, heat
ham in a
skillet or under the broiler until lightly browned and
heated through. Serve with apricot sauce.

Makes 4 servings.
