Mango Lime Trifle
Mango Lime Trifle
2 ripe mangoes peeled
1/4 cup orange liqueur
1/4 cup brown sugar
1 tbsp. fresh lime juice
1 cup Sunnyside Farms Heavy Whipping Cream
2 tbsp. powdered sugar
6 cups pound cake cubes
Prep time: 20 minutes, Chill time: 30 minutes

Cut the mango away from the pit and place fruit in a blender container; puree until smooth. Transfer to a small saucepan and add liqueur, brown sugar and lime juice. Cook over low heat for 5 minutes; let cool. Meanwhile, whip cream and powdered sugar until stiff peaks form. To assemble desserts, place half of the cake cubes in 6 dessert cups. Top with half the mango puree and half the whipped cream. Repeat layers. Chill for 30 minutes.

Makes 6 servings.
