Creole Sausage and Shrimp
Creole Sausage and Shrimp
Ingredients
1½ to 1¾ cups chicken broth (use rice package directions)
1 cup long grain rice
2 tbsp. butter, divided
1 tbsp. + 1 tsp. Creole seasoning, divided
1 lb. medium shrimp, peeled and deveined
1/2 of an 11- oz. package linguiça, sliced 1/4 -inch thick
1 medium green bell pepper, seeded and diced
2 cups Basic Roasted Tomato Sauce (see link to recipe in directions)
Directions

Prep: 15 minutes, Cook: 30 minutes, Serves: 4

1. Bring broth, rice, 1 tbsp. butter and 1 tsp. Creole seasoning to a boil in a medium saucepan. Reduce heat and simmer, covered, for 20 minutes.

2. Meanwhile, melt remaining 1 tbsp. butter in a medium skillet. Add shrimp; cook for 5 minutes or until shrimp is pink. Add linguiça and cook for 5 minutes more or until hot. Add green pepper, tomato sauce and remaining 1 tbsp. Creole seasoning to the skillet; cook until hot and bubbly. Serve over hot rice.
