Chile and Cheese Spoonbread
Chile and Cheese Spoonbread
2 cups milk
1 cup cornmeal
3 eggs
1½ cups shredded sharp Cheddar cheese
1/4 cup Land O'Lakes Sweet Cream Butter
1 (4- oz.) can diced green chiles
1 tsp. salt

Prep: 15 minutes, Cook: 35 minutes, Serves: 8

1. Preheat oven to 350°F and spray an 8-inch, 2-quart baking dish with nonstick cooking spray. Stir together milk and cornmeal in a medium saucepan.

2. Cook over medium heat, stirring constantly, until thickened, about 5 minutes. Remove from heat and quickly stir in eggs, cheese, butter, chiles and salt.

3. Pour into prepared dish and bake for 30 minutes or until mixture is set in the center.

Tip: Pair spoonbread with fried catfish or a rotisserie chicken for a perfect Southern meal.
