Greek Rice Salad

Greek Rice Salad
Ingredients
3 cups cooked Hinode Calrose Rice chilled
2 cups cooked chicken diced
1 cup cucumber peeled and diced
1 cup tiny cherry tomatoes or grape tomatoes
2/3 cup kalamata olives halved
1/3 cup red onion minced
Lemony Dressing (recipe follows)
1/2 cup feta cheese crumbled
Directions
Prep time: 15 minutes
Chill time: at least 1 hour

Stir together all ingredients except dressing and cheese in a medium bowl. Drizzle with dressing and toss well to coat. Sprinkle with cheese.

Lemony Dressing: In a small bowl, whisk together 1/3 cup extra virgin olive oil, 1/4 cup fresh lemon juice, 1 1/2 tsp. sugar, 1 1/2 tsp. oregano, 1 tsp. garlic salt and 1/4 tsp. pepper.

Makes 4 servings.
