Tangy Corn Relish

Tangy Corn Relish
Ingredients
3 cups canned or cooked fresh corn kernels
2/3 cup cucumber peeled, chopped
1/2 cup Nob Hill Trading Co. Roasted Red Bell Peppers chopped
1/2 cup green onions sliced
1/2 cup white wine vinegar
1 tbsp. olive oil
1 tbsp. sugar
1/4 tsp. celery seed
Directions
Prep time: 20 minutes, Chill time: several hours

Stir together all ingredients in a medium bowl.
Cover and chill at least several hours to marinate.
Spoon over hot dogs, grilled chicken or beef, or
serve as a side dish. Can be refrigerated up to 3
days.

Makes 8 side-dish servings, more if served as a
condiment.
