Tijuana Turkey Burgers

Tijuana Turkey Burgers
Ingredients
1 (20- oz.) package extra lean ground turkey
1/2 cup Mexican blend cheese shredded
1/4 cup chipotle salsa
1 tsp. Mexican seasoning
4 pot to or sesame seed buns toasted
4 (2-by-3 -inch) strips roasted red pepper
1/4 cup guacamole
Directions
Prep time: 10 minutes

Cook time: 10 to 12 minutes

Mix together turkey, cheese, salsa and Mexican seasoning
until well combined. Divide mixture into 4 equal portions
and shape into fairly flat patties. Grill over medium heat
for 5 to 6 minutes per side or until internal temperature
reaches 165°F. Serve on toasted buns with a pepper strip and
guacamole.

Makes 4 servings. Recipe may be doubled.

Served on 3/8/09. Used low-fat Mex. cheese, didn't add peppers or guac as I didn't have any. Good, flavorful and easy. Kids actually ate it, which is amazing.
