Tuscan Bean Crostini

Tuscan Bean Crostini
36 (1/4 -inch) baguette slices
3 tbsp. extra virgin olive oil divided
1 (15- oz.) can cannellini beans rinsed and drained
1 tbsp. extra virgin olive oil
1 tsp. garlic minced
1 tsp. lemon juice
1/4 tsp. sea salt
Fresh rosemary or basil
Parmesan cheese, if desired

Prep: 10 to 15 minutes Cook: 5 minutes  

1. Brush baguette slices with 2 tbsp. extra virgin olive oil. Place on a baking sheet and bake at 425°F for 5 minutes or until crisp.
2. Stir together beans, 1 tbsp. oil, garlic, lemon juice and salt. Coarsely mash, then spoon 1 rounded tsp. of spread onto baguette crisps. Top with snipped fresh rosemary or basil. Add a small shaving of Parmesan cheese, if desired.
