Sweet Potato Hash

Sweet Potato Hash
2 lbs. sweet potatoes (not yams), peeled and cut in to 1/2-inch cubes
1 medium onion, chopped
1/2 cup finely chopped fresh fennel
3 tbsp. organic extra virgin olive oil
1/2 cup diced red bell pepper
1/2 cup organic vegetable broth
2 tsp. Original Spike Seasoning
1 tsp. Simply Organic Garlic Salt
1 tsp. dried thyme
6 strips Lightlife Smart Bacon or MorningStar Farms Breakfast Strips
Freshly ground pepper
6 fried eggs (optional)
Chopped fresh thyme (optional)

Prep: 20 minutes, Cook: 35 minutes, Serves: 6

1. Cook sweet potatoes, onion and fennel in olive oil in a very large skillet over medium heat for 30 minutes or until very soft, stirring frequently. Stir in bell pepper, broth and seasonings; cook for 5 minutes more.

2. While vegetables are cooking, cook breakfast strips in a medium skillet over medium heat for a few minutes on each side or until crisp. Let cool slightly, then break into pieces over sweet potato mixture. Season with pepper and top each serving with a fried egg and chopped fresh thyme, if you like.
