Olive Cheddar Crisps
Olive Cheddar Crisps
1 (11- oz.) box pie crust mix
1½ cups sharp Cheddar cheese coarsely shredded
1/2 cup ripe olives well drained and finely chopped
1 tbsp. fresh rosemary chopped
1/2 tsp. coarse ground black pepper
2 tbsp. water

Prep: 10 minutes  Chill: several hours  Cook: 13 to 15 minutes  Makes: 50 crackers 

Stir together pie crust mix, Cheddar cheese, olives, fresh rosemary and ground black pepper in a medium bowl with a fork. Add about 2 tbsp. water, enough to make a firm dough. Roll into a 1½-inch diameter log and seal tightly with plastic wrap. Chill several hours or until very firm.

Preheat oven to 400°F. Cut dough into 1/8-inch thick slices and bake for 13 to 15 minutes on parchment-lined baking sheets or until lightly browned. Crackers are very fragile and should be stored in an airtight container.
