Cajun Ham, Bean and Green Skillet
1 tbsp. olive oil
2 cups 1/2-inch turkey ham diced
1/2 cups each: celery, onion and bell pepper chopped
1 cup fresh tomato chopped
1 (15- oz) can Raley's Black Eye Peas rinsed and drained
2 tsp. McCormick Perfect Pinch Cajun Seasoning
2 cups collard greens coarsely chopped

Prep: 15 minutes  Cook: 15 minutes  Serves: 4

1. Heat oil in a large skillet over medium-high heat. Add ham and cook for about 3 minutes to lightly brown. Add chopped vegetables, black eye peas and seasoning; cook and stir for 5 minutes. Cover and cook over low heat for 5 minutes more.

2. Stir in collard greens and cook just until wilted.
