Honeyed Apricots
Honeyed Apricots
Ingredients
2 cups dried apricots (bulk bin #625)
2 2/3 cups water
1/3 cup honey
1/4 cup organic rolled oats (bulk bin #767)
1/4 cup sliced almonds
2 tbsp. brown sugar
1 tbsp. Earth Balance Buttery Spread
1/2 cup lightly sweetened whipped cream
Directions
Prep time: 15 minutes
Cook time: 25 minutes

Combine apricots, water and honey in a small saucepan. Bring to a boil; reduce heat and simmer, uncovered, until apricots are soft and liquid is thick and syrupy, about 15 minutes. Mash apricots slightly with the back of a spoon; let cool.

Meanwhile, preheat oven to 350°F. Mix together oats, almonds, brown sugar and buttery spread with a fork. Place on a baking sheet and bake for 10 minutes or until lightly browned, stirring once or twice. Spoon apricots into 4 individual glass dishes.

Top each with a dollop of whipped cream and sprinkle with oat mixture.

Makes 4 servings.
