Wild Rice Pilaf with Cranberries, Toasted Pecans and Thyme
Wild Rice Pilaf with Cranberries, Toasted Pecans and Thyme
Ingredients
1-1/2 cups low-sodium chicken broth
1-1/2 cups apple cider (or apple juice)
3 tbsp. butter divided
1 cup wild rice
1/2 cup dried cranberries
1/2 cup chopped pecans toasted
2 tbsp. chopped fresh thyme
Salt and freshly ground pepper to taste
Directions
Prep time: 5 minutes
Cook time: 50 to 60 minutes

Heat broth, cider and 1 tbsp. butter in a medium saucepan. Add rice; cover and simmer for 50 minutes or until liquid is almost all absorbed. Drain excess liquid and stir in cranberries. Remove from heat and add remaining 2 tbsp. butter, pecans and thyme. Toss well to mix and season to taste with salt and pepper.

Makes 6 servings.
