Sesame Rice Salad with Spinach and Water Chestnuts

Sesame Rice and Spinach Salad
3 cups cold, cooked long grain brown or white rice
2 cups lightly packed, chopped fresh spinach
1/2 cup chopped red bell pepper
1/2 cup slivered almonds, toasted
1/3 cup sliced green onions
6 strips bacon, cooked crisp and crumbled
1 (8- oz.) can sliced water chestnuts, drained and cut into julienne strips

1/3 cup oil
1/3 cup rice vinegar
2 tbsp. soy sauce
2 tbsp. dry sherry
2 tbsp sugar
1 tbsp. sesame oil
1/2 tsp. garlic powder
1/4 tsp. pepper

Prep time: 15 minutes, Chill time: 1 to 3 hours, Makes: 6 servings 

1. Stir together all salad ingredients in a medium bowl; set aside.

2. Whisk together dressing ingredients; pour over salad and toss well to coat. Chill for at least 1 hour.

Tip: Salad may be prepared a day ahead without the spinach and almonds. Stir in the spinach and almonds just before serving.
