Paella Salad
3 tbsp. white wine vinegar
3 tbsp. olive oil
1 ea clove garlic minced
Salt and pepper
1 (5- oz.) package Mahatma Saffron Yellow Rice Mix prepared with chicken broth according to package directions
1 cup chicken cooked, cubed
1 cup shrimp cooked, peeled and deveined
1 ea medium tomato seeded and diced
1/2 cup frozen peas thawed
1/3 cup sliced olives
fresh lime wedges
Lettuce leaves
Whisk together vinegar, oil, garlic, salt and pepper. Add cooked rice, chicken, shrimp, tomato, peas and olives and toss lightly. Serve over lettuce leaves with fresh lime wedges. Chill until ready to serve.

Makes 4 to 6 servings.
