Tuscany Chicken and Tomatoes
2 bags Success White Rice
4 boneless, skinless chicken breast fillets
Salt and pepper
2 tbsp. olive oil divided
1 small red onion sliced
1 (8- oz.) package sliced mushrooms
2 medium tomatoes seeded and chopped
1-1/2 tsp. dried basil
Prepare rice according to package directions. Season
chicken with salt and pepper; cook in 1 tbsp. olive oil
until browned and cooked to an internal temperature of
165°F. Remove from skillet and keep warm. Sauté
onion in remaining 1 tbsp. oil for 5 minutes. Add
mushrooms and sauté for 5 minutes more. Stir in
tomatoes and basil; cook until heated through. Serve
chicken over a bed of hot rice.

Makes 4 servings.
