Marinated White Bean Salad with Rosemary and Roasted Red Peppers
Marinated White Bean Salad with Rosemary and Roasted Red Peppers
Ingredients
3 (15- oz.) cans small white beans rinsed and well drained
1/3 cup small, thin strips roasted red bell pepper
1/2 cup green onions sliced
1/4 cup extra virgin olive oil
3 tbsp. white or golden balsamic vinegar
1 to 2 tbsp. fresh rosemary chopped
Salt and pepper to taste freshly ground
Directions
Prep time: 10 minutes
Chill time: at least 1 hour

In a medium bowl, stir together beans, red bell pepper and onion. Whisk together olive oil and vinegar and pour over beans. Add rosemary and stir well to combine. Cover and refrigerate for at least 1 hour, stirring occasionally. Season to taste with salt and pepper.

Makes 6 servings.

Tip: Stir in cold, diced grilled chicken to turn this side dish into a main dish.
