Cheesy Grilled Cookout Potatoes
Olive oil cooking spray
1 medium onion, halved and thinly sliced
2 lbs. Yukon Gold potatoes, very thinly sliced
1 (7- oz.) package Pilgrims Choice Londoner Cheddar Cheese (in our Deli), shredded
1/2 cup real bacon bits or crumbled bacon
1/2 cup chopped bell pepper (any color)
1/2 tsp. garlic salt

Prep: 15 minutes, Cook: 1 hour, Serves: 6 to 8

1. Tear two 34-inch long pieces of wide heavy-duty foil and place on top of each other to make a double layer. Spray liberally with nonstick cooking spray. Place half the onions, potatoes, cheese, bacon bits, bell pepper and garlic salt on foil. Repeat layers.

2. Fold in top and sides to enclose, leaving room for air to circulate. Grill over medium-low heat for 1 hour, rotating packet occasionally to avoid hot spots.

This recipe was in one of the Something Extra issues last year. I have made this so may times I can't count. Truly awesome potatoes on the grill! Glad to see you are posting it for everyone to try. It's a keeper!
