Thai Barbecue Veggie Skewers

Thai Barbecue Veggie Skewers
Ingredients
6 bamboo skewers
1/2 cup organic vegetable broth
1 lb. yams, peeled and cut into 3/4 -inch cubes
1/4 cup organic barbecue sauce
1/4 cup Gramma's Sweet Chilli Sauce
2 tbsp. apple juice concentrate (in our Frozen Foods section), thawed
1/2 large red onion, cubed
1 bell pepper, cubed
Salt and pepper to taste
Directions

If using bamboo skewers, soak in water for 1 hour to keep from burning.

Prep: 20 minutes, Cook: 15 to 20 minutes, Serves: 6

1. Place broth and yams in a medium saucepan and bring to a boil. Reduce heat and simmer, covered, for 5 minutes; drain.

2. Stir together barbecue sauce, chilli sauce and juice concentrate in a small bowl. Thread vegetables on skewers and brush with some of the sauce mixture. Grill over medium heat for 10 minutes or until yams are tender, turning and brushing with remaining sauce. Season to taste with salt and pepper
