Cuban Mango Ham Sandwich
Cuban Mango Ham Sandwich
1 large ripe mango, peeled and pitted
1/4 cup honey mustard
4 Nob Hill Trading Co. ciabatta rolls, halved lengthwise
4 Large lettuce leaves
12 oz. thinly sliced ham
4 slices Swiss cheese
12 sandwich slice pickles
Olive oil cooking spray

Prep: 15 minutes, Serves: 4

1. Cut large pieces off 2 meaty sides of mango*; thinly slice. Cut away smaller strips from sides and place in a small bowl. Mash with a fork then stir in mustard.

2. Spread mixture on bottom half of rolls and top with lettuce, ham, cheese, sliced mango and pickles.

*To determine which sides of a mango are meatier, stand on end on the counter then let fall. The top and bottom will be the meatiest.
