Focaccia Egg Cups

Focaccia Egg Cups
1 (13- oz.) loaf Nob Hill Trading Co. Jalapeño Focaccia Bread
3 tbsp. Mezzetta Roasted Bell Pepper & Chipotle Sandwich Spread
1/2 cup shredded Mexican blend cheese
3 eggs
Salt to taste
1 tbsp. snipped fresh cilantro

Prep: 10 minutes Cook: 20 to 25 minutes Serves: 3

1. Preheat oven to 400°F. Cut bread into 3 equal pieces. Using a small sharp knife, cut away a “well” in the center of each large enough to hold an egg (don’t cut through the bottom).
2. Spread 1 tbsp. olive spread in each well, then carefully break an egg into each. Season with salt and pepper and sprinkle with grated cheese.
3. Bake for 20 to 25 minutes or until eggs are cooked to your liking, tenting with foil if top browns too quickly. Sprinkle with cilantro.
