Chilled Cantaloupe Soup with Crispy Prosciutto
Chilled Cantaloupe Soup with Crispy Prosciutto
4 strips prosciutto (in our Deli)
4 cups chilled, ripe cantaloupe cubes
1/2 cup chilled Bella Sera Moscato
1/4 cup each: honey and lemon juice
2 tbsp. fresh mint leaves
1 tbsp. fresh basil very thinly sliced

Make sure all ingredients are well chilled before pureeing.

Prep: 10 minutes, Serves: 4

1. Place prosciutto on a microwave-safe plate and microwave on HIGH for 2 to 3 minutes or until very crisp; crumble.
2. Puree remaining ingredients except basil in a blender or food processor. Ladle into bowls and top with crumbled prosciutto and basil.
