Spinach Pecan Salad with Mango Vinaigrette
Spinach Pecan Salad with Mango Vinaigrette
Ingredients
1/4 cup mango chutney
2 tbsp. extra virgin olive oil
2 tbsp. wine vinegar
3 cups lightly packed baby spinach
3 cups diced grilled chicken or cubed smoked turkey
1/2 cup Raley's Sweet and Spicy Pecans, coarsely chopped
1/4 cup sliced green onions
1 ripe mango, peeled, pitted and diced
Directions

Prep: 15 minutes, Serves: 4

1. Whisk together chutney, oil and vinegar in a large bowl.

2. Add remaining ingredients and toss well to coat. Serve immediatel.

This is a delicious salad! We made it as a side salad without the chicken. The dressing is super simple. Highly recommended!
