Fall Harvest Salad with Apple Vinaigrette

Fall Harvest Salad with Apple Vinaigrette
Ingredients
Vinaigrette:
1/4 cup extra virgin olive oil
1/4 cup apple juice
3 tbsp. Nob Hill Trading Co. Whole Grain Mustard
2 tbsp. balsamic vinegar
1 tbsp. honey
Salad:
2 (4- oz.) bags organic fresh herb salad blend
1 Large Fuji apple cored and cut into bite-size slices
1/2 cup dried cranberries (bulk bin #608)
1/2 cup walnuts (bulk bin #651) toasted
Directions
Prep time: 15 minutes

Whisk together all vinaigrette ingredients in a small bowl;
chill until ready to serve. Combine all salad ingredients in
a large bowl. Drizzle with vinaigrette and toss well to coat.

Makes 8 servings.
