Pork Carnitas

Pork Carnitas
Ingredients
3 lb. boneless pork shoulder roast
2 tbsp. oil
4 cloves garlic minced
1 small onion chopped
1 orange quartered
1 lime quartered
1/4 cup brown sugar
1-1/2 tsp. chili powder
1/2 tsp. salt
1/4 tsp. pepper
1/2 cup water
corn tortillas
flour tortillas
Directions
Prep time: 15 minutes
Cook time: 2 hours

Trim fat from pork and cut into cubes. Heat oil in a large pot and add pork, garlic and onion. Cook over high heat for 5 to 10 minutes to brown pork. Add orange, lime, brown sugar, chili powder, salt, pepper and water to pot; stir and bring to a boil. Cover and simmer for 1-1/2 hours or until pork is tender. Remove cover and cook over medium heat for 10 to 15 minutes or until liquid has cooked off. Press with the back of a spoon to break up meat and spoon into warmed flour or corn tortillas. Serve with salsa, beans and margaritas.

Tried this recipe and it had a strong citrus taste, make sure your orange is sweet not sour before attempting this recipe!

Instead of putting the citrus fruits in, which I think makes the carnitas bitter, I just use the juice of each....

I too only put the juices from the orange and lime in. You can also substitute orange juice if you don't have fresh fruit.

I usually only use orange and or lemon as the lime skin does make it bitter.
