Mediterranean Pasta Salad
1 lb. rotelle pasta
1 cup Mezzetta Express “Deli-Sliced” Peperoncini drained
1 1/2 cups Mezzetta Pitted Calamata Olives drained
1 cup Mezzetta Sun Ripened Dried Tomatoes, (reserve 1/4 cup oil) sliced
1 cup Mezzetta Roasted Bell Peppers chopped
8 oz. Mezzetta Marinated Artichoke Hearts drained and coarsely chopped
1/4 cup red wine vinegar
1 tsp. basil
1/2 tsp. pepper
1/2 tsp. salt
Prep time: 20 minutes
Cook time: about 15 minutes

Cook pasta according to package directions; rinse under cold water and drain thoroughly. Place in a large bowl with remaining ingredients including reserved sun dried tomato oil; toss well. Serve immediately or cover and refrigerate until ready to serve.

Makes 8 servings.
