Cherry Almond Energy Bars
Cherry Almond Energy Bars
Ingredients
2 cups rolled oats
1/2 cup dried cherries
1/4 cup vanilla flavored whey protein powder
1/4 cup shredded coconut
1/4 cup wheat germ
1/2 cup honey
1/2 cup Kettle Roaster Fresh Almond Butter (in the Natural Foods Dept.)
1 tsp. cherry extract
Directions

Prep: 20 minutes Chill: 1 hour Makes: 8 bars

1. Line an 8-inch square baking pan with plastic wrap, making sure there is enough to fold over and cover the pan. Stir together oats, cherries, protein powder, coconut and wheat germ in a medium bowl; set aside.
2. In a small saucepan, heat honey over medium heat until the color begins to deepen, about 5 minutes. Stir in almond butter and cherry extract; pour over oat mixture. Quickly stir mixture until fairly well blended, then use your hands to mix completely. Turn into prepared pan and fold plastic over the top. Press firmly on the entire surface until mixture is flat and firm.
3. Refrigerate for at least 1 hour. To cut, lift the sides of the plastic wrap to pull the mixture out of the pan. Cut into 8 equal pieces. Wrap individually for easy packing.
