Mexican Chicken Roll-Ups
Mexican Chicken Roll-Ups
1 burrito size flour tortilla
1/4 cup whipped cream cheese
3 tbsp. salsa
1/2 cup pre-cooked Southwestern seasoned chicken breast strips (from our Meat Dept.)
1/2 cup romaine lettuce chopped
1/4 cup shredded Mexican blend cheese
2 tbsp. sliced ripe olives (optional)

Prep: 10 minutes Cook: 20 minutes Makes: 1 large or 2 small servings

1. Spread cream cheese on 2/3 of the tortilla. Top with salsa. Sprinkle with chicken, lettuce, Mexican blend cheese and olives.
2. Roll up tightly, ending with the empty part of the tortilla (the mixture will spread out as you roll). Cut in half, wrap tightly and refrigerate until ready to pack or serve.
Tip: This creamy mixture is also great spread on small flour tortillas. Roll up tightly and wrap in plastic.
