Cobb Salad Sandwiches
3 cups rotisserie chicken meat chilled and coarsely chopped
1 cup tomato chopped
1 cup romaine lettuce chopped
2 hard-cooked eggs chopped
1/4 cup bacon cooked, crumbled
1/4 cup crumbled blue cheese
1/4 cup blue cheese dressing
6 sweet French rolls hollowed out
Prep time: 15 minutes

1. Stir together chicken, tomato, lettuce, eggs, bacon,
cheese and dressing in a medium bowl; mound into rolls.
2. Wrap tightly and refrigerate until ready to pack or serve.

Makes 6 sandwiches.

Make-ahead tip: You can make this the night before and
enjoy for lunch the next day.
