Tomato Herb Grilled Shrimp

Tomato Herb Grilled Shrimp
Ingredients
1/3 cup sun dried tomato spread
3 tbsp. red wine vinegar
1/2 tsp. crushed red pepper flakes
2 cloves garlic minced
1 lb. large peeled and deveined shrimp
Mixed greens
Directions
Prep time: 10 minutes

Marinate time: 10 minutes

Cook time: 7 to 10 minutes

Mix together all ingredients except shrimp in a small bowl.
Stir in shrimp and let marinate for 10 minutes. Grill shrimp
over medium heat for 7 to 10 minutes or until pink, turning
and brushing occasionally with excess marinade. (Discard
any remaining marinade.)

Makes 2 large or 3 smaller servings.
